VINEYARD & FARMING
Beykush's 11 hectares of vineyards are located in the village of Chornomorka in the Mykolaiv region, 100 meters from the Black Sea coast of Ukraine. The vineyards are on the Beykush peninsula, on the extreme southeastern edge of Ukraine, influenced by the Berezan estuary on one side and the Beykush Bay on the other.

Beykush employs principles of organic viticulture to reduce the harmful effects of herbicides and synthetic fertilizers. The vineyards are weeded by hand and the soils are only fertilized with organic substances such as cow dung. The vineyards are situated on a mixture of red clay and loam that provides great natural drainage. The vines are trained on a bilateral Guyot system spaced at 1 metre in rows 2.5 meters apart.

WINEMAKING
Grapes were handpicked at the optimum stage of maturity, hand sorted on a sorting table, crushed and then fermented in 400-liter "tinajas" Catalonian clay amphoras. After the end of fermentation, the wine was left in contact with the skins and seeds for 1 month, then pressed and left for settling. After racking from the lees the wine was transferred back to the tinajas where it was left for 6 more months on the fine lees. The wine is golden amber in color.
