VINEYARD & FARMING
Beykush's 11 hectares of vineyards are located in the village of Chornomorka in the Mykolaiv region, 100 meters from the Black Sea coast of Ukraine. The vineyards are on the Beykush peninsula, on the extreme southeastern edge of Ukraine, influenced by the Berezan estuary on one side and the Beykush Bay on the other.

Beykush employs principles of organic viticulture to reduce the harmful effects of herbicides and synthetic fertilizers. The vineyards are weeded by hand and the soils are only fertilized with organic substances such as cow dung. The vineyards are situated on a mixture of red clay and loam that provides great natural drainage. The vines are trained on a bilateral Guyot system spaced at 1 metre in rows 2.5 meters apart.

WINEMAKING
The grapes were handpicked, sorted by hand on a sorting table, crushed, cold-soaked for 12 hours at 4 °C, then pressed. After settling and racking, the must was fermented in temperature-controlled stainless steel tanks at 17°C, then aged on the fine lees with periodical stirring for 5 months.
